Ingredients
- 1 ½ cups of LFGF All-Purpose Wholemeal or Plain Flour
- ½ cup of sugar
- 1 cup of desiccated coconut
- 2 tablespoons of Gluten Free cocoa powder
- 185g (6oz) of butter, melted
- ½ teaspoon of vanilla
For the Chocolate Icing
- 1 cup Gluten Free icing sugar
- 2 tablespoons Gluten Free cocoa
- 30g (1oz) butter, melted
- 1 ½ tablespoons hot water
- Extra desiccated coconut to sprinkle on top
Method
- Put dry ingredients, melted butter and vanilla into a bowl; mix well.
- Press mixture into a 20cm x 18cm lamington tin.
- Bake in a moderate oven for 20 minutes.
- Cool in tin.
- For the icing: combine icing sugar, cocoa, melted butter and hot water. Spread over the cooled base and sprinkle with extra coconut.
Handy Hints
- LFGF products are gluten, egg, dairy, and soy free, and are vegan friendly. Replace any dairy or egg products/ingredients with lactose or vegan alternatives.
- LFGF flour works cup for cup with wheat flour.
