LFGF Chocolate Fudge Bars

Looking for a sweet indulgence? Try our gluten free chocolate fudge bars and treat yourself to some good old fashioned heart warming yummy that won’t blow the diet.

Ingredients

  • 1 ½ cups of LFGF All-Purpose Wholemeal or Plain Flour
  • ½ cup of sugar
  • 1 cup of desiccated coconut
  • 2 tablespoons of Gluten Free cocoa powder
  • 185g (6oz) of butter, melted
  • ½ teaspoon of vanilla

For the Chocolate Icing

  • 1 cup Gluten Free icing sugar
  • 2 tablespoons Gluten Free cocoa
  • 30g (1oz) butter, melted
  • 1 ½ tablespoons hot water
  • Extra desiccated coconut to sprinkle on top

Method

  1. Put dry ingredients, melted butter and vanilla into a bowl; mix well.
  2. Press mixture into a 20cm x 18cm lamington tin.
  3. Bake in a moderate oven for 20 minutes.
  4. Cool in tin.
  5. For the icing: combine icing sugar, cocoa, melted butter and hot water. Spread over the cooled base and sprinkle with extra coconut.

Handy Hints

  • LFGF products are gluten, egg, dairy, and soy free, and are vegan friendly. Replace any dairy or egg products/ingredients with lactose or vegan alternatives.
  • LFGF flour works cup for cup with wheat flour.
