LFGF Banana Bread

An old favourite enjoyed by all.

Ingredients

  • ⅔ cup of sugar
  • 2 teaspoons of Gluten Free baking powder
  • ⅓ cup of soft butter or Nuttelex
  • ¼ teaspoon of bicarbonate soda
  • 2 eggs, unbeaten
  • 1 cup of banana, mashed
  • 1 ¾ cups of LFGF All-Purpose Wholemeal Flour

Method

  1. Place soft butter/Nuttelex, eggs and sugar into a bowl — mix for 3 minutes.
  2. Add the rest of the ingredients (LFGF All-Purpose Wholemeal Flour, baking powder, bicarbonate soda and the mashed banana). Mix together.
  3. Grease a regular size loaf tin.
  4. Pour batter into loaf tin and bake in a low oven around 110°C for 1 hour or until a toothpick inserted in the middle comes out clean.

Handy Hints

  • You can add any flavours to the LFGF All-Purpose Wholemeal Flour dry mix and spread the taste through the whole loaf.
  • LFGF products are gluten, egg, dairy, and soy free. Replace any dairy or egg products with vegan alternatives.
