LFGF Applesauce Cupcakes (Vegan Friendly)

Simple, moist, and naturally sweetened — these vegan-friendly applesauce cupcakes are a wholesome treat for the whole family.

Ingredients

  • ⅓ cup of any oil (olive, rice bran, macadamia oil)
  • ¾ cup of coconut sugar or raw sugar (finely ground)
  • 1 ½ cups of stewed apple (puree/sauce)
  • 2 cups of LFGF All-Purpose Plain Flour
  • ½ teaspoon of salt
  • 1 ½ teaspoons of Gluten Free baking soda
  • 1 teaspoon of cinnamon

Method

  1. Preheat oven to 175°C (350°F).
  2. Prepare a 9-cup muffin tray.
  3. Mix oil and sugar; then add applesauce.
  4. Combine dry ingredients and applesauce mixture, mix until smooth.
  5. Spoon into prepared muffin tray and bake until a skewer comes out clean.
  6. Serve hot or cold with coconut yoghurt.
