Ingredients
- ⅔ cup of sugar
- ⅓ cup of soft butter or Nuttelex
- 2 eggs, unbeaten
- 4 & ⅔ cups of LFGF Whole Flour
- 2 teaspoons of baking powder
- ¼ teaspoon of bicarbonate soda
- 1 cup of banana, mashed
Method
- Place soft butter or Nuttelex, eggs, and sugar into a bowl.
- Mix these ingredients for 3 minutes.
- Add the remaining ingredients (LFGF Wholemeal Flour, baking powder, bicarbonate soda, and the mashed banana) to the egg/butter/sugar mixture and mix together.
- Grease a regular size loaf tin.
- Pour batter into loaf tin & bake in low oven around 110°C for 1 hour (or until an inserted toothpick in the middle comes out clean).
- Cool on rack, slice, and enjoy!
