Banana Bread with Egg


  • ⅔ cup of sugar
  • ⅓ cup of soft butter or Nuttelex
  • 2 eggs, unbeaten
  • 4 & ⅔ cups of LFGF Whole Flour
  • 2 teaspoons of baking powder
  • ¼ teaspoon of bicarbonate soda
  • 1 cup of banana, mashed


  1. Place soft butter or Nuttelex, eggs, and sugar into a bowl.
  2. Mix these ingredients for 3 minutes.
  3. Add the remaining ingredients (LFGF Wholemeal Flour, baking powder, bicarbonate soda, and the mashed banana) to the egg/butter/sugar mixture and mix together.
  4. Grease a regular size loaf tin.
  5. Pour batter into loaf tin & bake in low oven around 110°C for 1 hour (or until an inserted toothpick in the middle comes out clean).
  6. Cool on rack, slice, and enjoy!
